I prepared this tarte yesterday as an extra treat for breakfast. The result surprised me with the soft and creamy but incredibly light texture. The secret ingriedient is definitely the avocado in the filling which takes on the chocolate taste from the raw cocoa powder. With being so extra creamy and chocolatey its definitlely on my list for doing it again and again. Great also for midnight cravings due to its lightness you won’t be feeling bloated and full afterwards!
You can also just make the filling and serve it as a chocolate mousse.
For the crust I took hazelnuts but you can choose any nuts that you want like walnuts, cashews or almonds and also add some shredded coconut. The sprouted wheat takes some preperation time as it takes two days to sprout. But therefore you will have all the good qualities of life energie and nutriton in your cake, almost like eating a salad 😉
Ingredients for the base
- 150 gr. hazelnuts
- 150 gr. sprouted wheat
- 7 pitted and soaked dates
- Vanilla flavor
Mix all ingredients in an kitchen machine, take care not to overprocess. Just mix until everything is shredded and you can form the dough with your hands. Fill in a small/medium tarte form.
Ingredients for the filling:
- 2 ripe avocados
- 50-100 gr. hazelnuts
- raw cacao powder (as much as you like)
- 7 soaked (0,5 h) and pitted dates
- 1 ripe banana
- 1/4 cup nut milk (almond, hazelnut, cashew etc.)
First mix the dates and the milk in the blender to create a paste. Then add all the other ingredients. The filling should be a mousse so if it is to liquidy just ad some more hazelnuts and/or cocoa powder, if it is not liquid enough add some more milk.
Now fill the mousse in the prepared form and decorate with thin bananaslices or nuts or any other fruits 🙂
I freezed my tarte for 2 h in the freezer to get it out of the form because I didnt have one where you can take the sides of. It was a yummie side effect 🙂
