After a lot of tasty (but also heavy) food in Cuba, and inspiration of people already doing it, I decided to make a few raw food days!
Breakfast was an easy thing as I didn’t had to change something: a big fruit smoothy with nuts! Same for evening: a big salad with all greens veggies and also nuts in side, or a nice green smoothy if you really want to be cleaned up from inside!
Only for lunch I had to improve my normal dishes. As I cooked lately a lot if Italian stuff, I decided to make raw versions of exactly these!
So here the classic: pasta pomodoro but raw!
• zucchinis (one per person)
• 6 tomatoes
• 1 carrot
• celery (handful)
• a big handful of walnuts
• a few champions
• onion and garlic after taste
• olive oil virgin extra
First you have to make pasta out of the zucchinis. I used a normal peeler so you have more something like linguini. But there is also an extra thing for it!
Then cut tomatoes, carrot, celery, parsley, onion and garlic and mix it well! Add a little juice of lemon and oil. Cut the champions in small pieces and give it to the sauce without mixing it anymore. Put the sauce over your noodles and give walnut pieces over it.
