Simply V vegan cheese 

As we love vegan cheese we are more than happy to see more and more vegan cheese alternatives !!

One very good one is the cheese of SimplyV ! This company is fully vegan and produces all its cheese on base of almonds, without soy, artificial flavor enhancers or palm oil!

The mix of almonds, water, coconut oil and salt makes a perfect creamy texture! By now we tried the plain cream cheese, cream cheese paprika, sliced cheese with pepper and chocolate cream! We tried a lot of recipes with these different cheeses! All recipes are from SimplyV and here is the outcome! Let’s start with breakfast!!

We are getting started with maybe one of the most classical versions of German breakfast… Buns with cheese and chocolate cream!! My favorite of this one: sliced cheese with cucumber and of course with the creamy but still light chocolate cream 😋

Avocado boats

Really nice starter if you have guests or just as a quick snack instead of a salad.

you need:

  • 1 ripe avocado
  • 1 tomato
  • 1 spring onion
  • bit of fresh parsley or basil
  • olive oil
  • juice of 1 lime or half a lemon
  • salt, pepper, oregano

cut the avocado in half and remove the stone.

Cut the tomato, the spring onion and the parsley and season with the rest of the ingredients and fill the avocado-halfs.

place a bit of mustard on the top and enjoy your creation using a spoon

Today i share with you my second favorite recipe with hokkaido:

PUMPKIN_CARROT_GINGER – SOUP

It´s a classic but simply great and very healthy and digestive!

What you need:

  • Hokkaido pumpkin
  • piece of ginger
  • carrots
  • onion
  • herbs
  • vegetable stock (pls use organic!!)
  • a blender
  • salt & pepper
  • a lime

What to do:

  • cut pumpkin, carrots, ginger and onions into pieces
  • roast everything in good quality oil for some minutes
  • add stock so its covered by it
  • boil until vegetables are smooth
  • let it cool down a bit and put it in the blender until its creamy
  • spice it

If you like:

  • add some coconut milk to make it more creamy
  • squeeze a lime on it before eating
  • put roasted nuts / seeds on it
  • make green salad as side dish

Some time ago, i decided to pay more attention to buy and eat vegetables +  fruits in the “right” time. Will say, on the one hand, i want to avoid environmental pollution through long transports and on the other hand i eat food in its best condition, with all vitamins and nutrients which normally get lost after a transport from other countries.

In the future i will share with you some my favorite recipes for the current plant i´m dealing with 🙂 I start with:

                                                                                 PUMPKIN

After a few weeks  of “pumpkin-time”, i see it in a new way, there are so many different ways to prepare it! And the best, all of them are quite uncomplicated and quick!

The one shown in the pictures is my absolutely favorite! Let´s call him Curry – Oven – Hokkaido!

time: 20 min

needed:

* Hokkaido pumpkin

* Olive oil

* red curry paste

* pressed garlic

* salt & pepper

* herbs

* paprika powder

* masala

if you like:

* chili

* onions

* smoked tofu

instructions:

* cut the hokkaido in slices & heat the oven

* mix all the other ingredients in a small bowl

* put it over the pumpkin —> oven

* if you like, cut smoked tofu /onion in very small cubes and put it above all —> it will get CRISPY!

* after – 10-15 min, its smooth and tasty

Serve with a fresh green salad – DELICIOUS !!!

Couscous zucchini salad

This half raw salad is a really fast and easy made dish!

You need
• couscous
• zucchini
• tomatoes
• carrots
• spring onions
• tofu
• zucchini flowers

Just cook the couscous, cut the vegetables and tofu and mix all together that it looks good on the plate!

If you are no friend of so many raw vegetables, just make all like in the recipe before and at the end fry it.
Then it would look like this!

Another option could be to just fry the tofu with spices and herbs…

Salad with algae chips

This nice looking algae chips are one of my last Ibiza souvenirs. I bought it there in an organic shop and was so sure that it will taste good…. But actually it was not really as good as I hoped!
I was so hungry but could ate only a handful, and this means a lot for I eat almost everything if it’s vegan!
Today I wanted to make a salad but was not sure if it will be enough for my hunger feeling this evening, so this algae chips came to my mind and I put it inside too!
The result was good! I like salads with all kind of different things inside!
I just put:
• mixed green salad leaves
• carrot
• tomatoes
• zucchini
• algae chips (handful)
• olive oil
• salt
And ready… A new creation!

Cicoria (Dandelion)

One of my favourite dishes here in Italy is Cicoria! Just recently I found out that it’s dandelion leaves!
Here are two ways to prepare it!
The first is to prepare it as a starter or side dish:
• Take as much of dandelion leaves as
you want to prepare
• cook it for a while to put out the bitter
taste, then
• fry it in olive oil with garlic
• add salt and chili

As a main dish:
Dandelion (Cicoria) and potatoes
• cook dandelion leaves
• cook also for the same time a few
potatoes
• after cooking chop the potatoes and
the dandelion leaves
• fry all together with garlic or onions
• add chili and salt

Gazpacho – cold Soup for hot days

After a hot summer day in Berlin and of course all over the world, the perfect dinner is a cold soup! Today i made the tradicional spanish Gazpacho!

You need:

  • 6-8 tomatoes
  • 1 yellow pepper
  • 1 red pepper
  • 1 big cucumber
  • a few cloves of garlic
  • 1 big onion
  • a few basil leafs
  • olive oil and vinegar (choose just a sort of your taste)
  • vegetable consommé

normally you also add bread, Ciabatta for example, toasted in little pieces and over the ready soup or soaked and directly into the soup!

As i like it easy and fast when i’m hungry i put all ingredients in a mixer, 5 minutes mixing and its ready to eat !! for picture and decoration i put little pieces of green pepper on top 🙂

Bread Salad

Do yo think it’s possible to make a girls-dancingfilm-evening with light and healthy food? After last weekend I definitely say YES, it is!!!

Here is the recipe for the awesome Bread salad:

  • avocado
  • cucumber
  • tomatos
  • hazelnuts
  • lime
  • green beans
  • spinach
  • quinoa (one or two hands full, lots of protein inside!)
  • whole-grain bread (per person one slice)
  • fresh herbs (we took parsley and mint)
  • olive oil
  • vinegar
  • salt&pepper

cut all, fry the hazelnuts for a better taste, cook the quinoa

 

 

 

 

 

 

and spread oil on your slices

 

 

 

 

 

 

 

 

after this just toast the bread and then cut it into pieces

 

 

 

 

 

 

 

 

 

now you can put all together in a bowl, add oil and vinegar, salt and pepper and it’s ready to eat!
